This isn’t about cutting everything out, it’s about making swaps you’d happily eat again. I’m focusing on changes that keep flavour high while quietly improving nutrition.

- Greek yoghurt instead of full fat mayo
- Lean meat swaps e.g. pork loin instead of pork belly
- Higher protein carbs such as high protein flour, pasta, breads and other swaps where it actually makes sense

Why This Recipe Works

Mushrooms and bacon are no strangers to pasta, but for even greater savory flavor, we added instant dashi powder and soy sauce to the dish. We began by crisping bacon in a skillet, then removed it and browned a pound of mushrooms in the fat left in the pan (any type or mix of mushrooms will do), followed by scallions and garlic. To finish the sauce, we stirred in some pasta cooking water, butter for silky texture, and the instant dashi powder and soy sauce. Despite only lightly coating the spaghetti, the resulting sauce turns the dish into a flavor powerhouse.
A vegan feast in Sicily
As a vegan who loves trying local cuisine, the combination of warm hospitality and a high proportion of locals with a lactose intolerance makes Sicily the ideal foodie getaway. Having hiked to the top of Monte Pellegrino in 35C heat, we popped into a small nondescript street-food shop (the only place that was open) and were delighted to find panelle – delicious crispy chickpea-flour fritters served in sesame bread. We ate them overlooking Palermo harbour. That evening, we tried Haiku, a vegan restaurant with reimagined classics based on dishes such as carbonara and tiramisu.
